It really is a game changer, i agree with you.
but it's really hard when there are no mobs around and the only way is fishing..

Sharpness 1 is .5 to 1.5 extra hearts damage per hit. So an iron sword with Sharp1 is atleast as good as an dia sword, most the times even better.

and right now enchanting tables aren't very helpful because you can't get to level 1 because there are no mobs

There are ways to get levels. You can kill animals (maps like SG2 and especially Treacherous Heights are great for this). You can fish for XP too.
