Only reason your getting crazy fps is because minecraft doesn't depends so much on graphics, should trying playing minecraft realism texture pack and see your fps.

A lot of these images are just you guys staring at the floor or sky - no chunk updates. You should look at a complex town or minecraft scenery. On average I get 90 - 150 fps.

On my macbook pro I am able to get about 160 fps. I can do this because I cleaned out my computer and dedicated over 2 gigs to mine craft
