Honestly, i think its cause of the lag on eachother's end and both people grab the item at the same time...but one person gets it faster on his screen and the other person, gets it taken away at a random time

It gets taken away when it realizes someone else really has those items. But I think it's both of these (What Danie suggested and the chest closing immediately after opening), because if you test them both out (however well you can) they should both work.
